Instructions
Setup 3 breading stations: Flour, Breadcrumbs with Parmesan Cheese, and Egg wash.
Slice each chicken breast horizontally into two thin cutlets.
Pound gently between plastic wrap to about ½ inch thick.
Season both sides with salt and pepper.
For each cutlet: First, Dredge in flour and shake off excess, then, dip in egg, finally. Press firmly into breadcrumb mixture.
Rest cutlets for 5-10 minutes.
Heat oil over medium to medium-high heat.
Fry 2 cutlets at a time, about 3–4 minutes per side.
Cook until golden brown and internal temp reaches 160–165°F.
Place on a wire rack (not paper towel) to stay crisp.
Preheat oven to 400°F.
Spread a thin layer of marinara in a baking dish.
Place cutlets on top.
Spoon 2–3 tablespoons sauce over each.
Top with mozzarella.
Bake 10–15 minutes until cheese melts and lightly browns.
