Instructions
In a large, deep skillet or sauté pan, combine the diced tomatoes and their liquid, chicken broth, frozen peppers and onions, garlic, Italian seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
Nestle the raw chicken thighs into the mixture, bone-side down. Bring to a gentle simmer, cover, and cook for 20 minutes.
Remove the chicken thighs to a plate. Break the spaghetti in half and stir it into the simmering tomato mixture. As the pasta begins to soften, stir and separate the strands so they don't stick together.
Nestle the chicken thighs back into the pan among the spaghetti. Cook uncovered or partially covered for another 10–14 minutes, stirring the spaghetti around the chicken every few minutes.
Note: If the pasta absorbs all of the liquid before becoming tender, add additional chicken broth or water ¼ cup at a time.
Cook until the spaghetti is tender and the chicken reaches at least 165°F (74°C) internally. Bone-in chicken thighs will generally become more tender when cooked to around 175–185°F (79–85°C).
Add optional spinach.
Note: If using spinach, stir it into the pasta during the final 1–2 minutes and allow it to wilt.
Remove the pan from the heat. Place the Greek yogurt in a small bowl and stir in 2–3 tablespoons of the warm tomato sauce to temper it.
Stir the tempered Greek yogurt and Parmesan into the spaghetti until the sauce is creamy and evenly combined.
Taste the pasta and adjust the salt and pepper if necessary. Divide the spaghetti and vegetables among four plates and serve one chicken thigh with each portion.
