Instructions
Cook the rice in rice cooker or on the stove using 2:1 ratio of water.
Slice tops off peppers and remove seeds.
Preheat oven to 375°F
Heat olive oil in a skillet over medium heat.
Add Turkey and onion to skillet and cook until turkey is no longer pink.
Add garlic and cook 30 seconds.
Stir in tomatoes, tomato paste, salt, pepper, paprika, and Italian seasoning.
Fold in cooked rice. Simmer 3–5 minutes so flavors combine.
Spoon filling into peppers.
Place in a baking dish with ½ cup water in the bottom.
Cover loosely with foil and bake 30–35 minutes.
Remove foil, top with cheese, and bake another 10 minutes until melted and peppers are tender.
Let sit 5 minutes before serving.
